Okay... my high school spanish sucks. I can understand only about 20% of what I read in the official documentation for Fenix.

Are there any other tutorials other than the ones that EvilDragon wrote for the GP32 a year and a half ago or am I stuck learning what I can from the source of the example programs on Fenixonfire?

FlamingBird.com used to have some if I'm not mistaken, as well as a (dead) forum full of Q&A's. Take a look here as well, more source codes for your learning pleasure.

I personally think the fenix section of this site should be expanded. it needs a simple tutorial command and syntax section. It's all very nice saying "You can look at an example of how to use collision in this huge project" but I think it would be better just to show the simple code instead of having it nestled inside project. Did that make sense?

I am willing to help build up this section, being new to fenix etc. I think I can see what newcomers might require.

Perhaps writing more tutorials for FenixOnFire would be a good option.
